Phyllo cups with herb ricotta, caramelized onion, and fig jam
Ingredients
For the herby zesty ricotta:
· 1 1/2 cup ricotta cheese
· 1/4 cup fresh herbs (such as basil, parsley, and chives), finely chopped
· Zest of 1 lemon
· Salt and pepper to taste
For the caramelized onion:
· 2 large onions, thinly sliced
· 2 tablespoons olive oil
· 2 tablespoons butter
· Salt and pepper to taste
For assembling:
· Phyllo pastry cups
· Herbs for garnish
· Fig jam
· Sea salt for garnish
Instructions
1.    Prepare the herby zesty ricotta: In a bowl, combine the ricotta cheese, chopped fresh herbs, lemon zest, salt, and pepper. Mix well and refrigerate until needed.
2.    Make the caramelized onion: Heat olive oil and butter in a large skillet over medium-low heat. Add the thinly sliced onions and cook, stirring occasionally, for about 30-40 minutes or until the onions are soft, caramelized, and golden brown. Season with salt and pepper to taste. Set aside to cool.
3.    Assemble the phyllo cup canapé: Fill each phyllo cup with a spoonful of the herby zesty ricotta. Top the ricotta with a small spoonful of caramelized onions. Finish by adding a dollop of fig jam on top. Garnish with fresh herbs and sea salt if desired.
